WHO WE ARE
A NOD TO YESTERYEAR
In 1897, Francis Walterlin and John Martin began an ice harvesting industry on the Menomonee River. The ice trade, also known as the frozen water trade, was a 19th-century and early-20th-century industry, involving the large-scale harvesting, transport and sale of natural ice for domestic consumption and commercial purposes.
Ice was cut from the surface of ponds and streams, then stored in ice houses being shipped by barge or railroad. The ice trade revolutionized the U.S. meat, vegetable and fruit industries and encouraged the introduction of a range of new drinks and foods.
OUR FEARLESS LEADER
Gil Amador, Executive Chef of Waterlin Coffee Bar & Bistro, grew up in Mexico with a strong family tradition of culinary arts. At a young age he began assisting with family meals and by his teens, Gil knew he wanted to make that culinary tradition his career. Chef Amador came to the United States in 2006 and started cooking at local restaurants while developing his skills. In 2014, Chef Amador made the leap into the hospitality industry at a large hotel in downtown Milwaukee and in 2016 became a US Citizen.
Being named the Executive Chef at the Delta Hotels by Marriott Milwaukee Northwest in February 2019, Gil was immediately immersed in the development of the Waterlin Coffee Bar & Bistro menu. “I wanted the menu to be traditional comfort foods all made from scratch, nothing pre-made,” says Gil, “To me, using locally sourced and inspired foods is so very important. Everything needs to be fresh and authentic, made from scratch with care.” In the end, the menu was a total team effort and we’re excited to share it with the Menomonee Falls community!
